Mmm… Carrots!

Our friends over at Lifehacker have shared some really interesting info about the humble carrot.  It turns out that cooking them whole has both cancer-fighting benefits and improves the flavour, as less sugar is lost during the cooking process.

As originally reported on the BBC website, cooking carrots whole means that they have a much higher level of falcarinol, a compound which earlier studies have linked to reduced levels of cancer. Cut carrots are more likely to leach out falcarinol from the increased surface area.

Of course, cooking whole is no guarantee that kids will eat them. Try a drizzle of honey or some white sauce for your vege-phobic kids.
